What is pomegranate-gastrique sauce (like one might have on duck)?

Gastrique is a French sauce made by a reduction of a sugar%26amp;vinegar-based syrup, usually flavored with some kind of fruit, especially citrus. I found the link below, which tells how to make a blackberry gastrique (from Epicurious.com)... the sauce you're asking about would simply substitute pomegranate and some sugar for the blackberry preserves. Pomegranate Gastrique -





2 1/2 cups red wine vinegar (GOOD QUALITY)


1/2 cup packed dark-brown sugar


3 tablespoons pomegranate molasses








In a small, NONREACTIVE saucepan, combine vinegar and brown sugar over medium heat, stirring occasionally, until reduced by three-quarters. Whisk in molasses.
